Innovative fermented whey-based drinks !

The partners of the FAIRCHAIN project involved in the French case Study, have been working intensively in recent months to develop new fermented whey-based drinks. The concepts of the drinks have been defined and the first bottles are expected in mid-2023 !

Thanks to an approach integrating all the actors of the value chain, several consumer studies (Web Safari, Market Place, Focus group, ...) and innovative technological developments, the FAIRCHAIN partners of the French case study have developed new fermented drinks. These drinks are based on whey, a co-product of cheese production.

Two concepts of fermented whey-based beverages were proposed and declined in several flavours: one of the "fruit juice" type, the second of the "kefir drink" type, naturally sparkling.

Laboratory-scale feasibility was carried out. The visit to Poligny at the beginning of December 2022 enabled us to visit the Vevy cheese factory (Monts et Terroirs, Sodiaal group) and to define the equipment and conditions in which the drinks will be produced on a pilot scale with ENILBIO (https://www.enil.fr/ecoles/enilbio).

The new fermented drinks, produced exclusively from whey, ferments and herbs or fruit juices, will be manufactured in the Franche Comté region by summer 2023.
